From my experience the easiest way to cook poached eggs is in a frying pan (YES in a frying pan!!!). Fill the frying pan with water almost to the top, add few tablespoons of vinegar and bring it to simmer. Pour few eggs and leave them there without mixing for about 3 minutes until the white of the egg is cooked. Take the eggs out, trim and your poached eggs are ready.

Sous vide is not my favorite cooking method. It requires extra equipment, like the vacuum sealer, and I really have an issue of my food being cooking in a plastic bag, therefore releasing all the microparticles of plastic in my food.

So sous vide or not sous vide ? That is entirely up to you. It offers the benefit of controlling the cooking temperature with high precision, which is great for your steaks for example, however, has some drawbacks, in my personal judgement, when it comes to it healthiness.

My favorite food to steam is simple potatoes. Choose a firm potato type and give them 20 minutes. Once your knife can be easily stuck in, pour them out and add some real butter and salt. Perfect with any fish!

You can also add asparagus in the same steam basket with your potatoes for the last 5 minutes of cooking. Do not overcook the asparagus – it is best when it is still a little crunchy.
